Top of the Hill Restaurant & Brewery, better known as TOPO, has become “The Social Crossroads of Chapel Hill.” The idea for TOPO was conceived in 1994 by former US Army officer and combat veteran Scott Maitland, a UNC Law student at that time, to save Chapel Hill’s beloved downtown from being dominated by a chain restaurant. It opened in 1996 and quickly became a landmark.
TOPO is North Carolina’s 5th oldest brewery and the first micro-cannery in the South. They planned on expanding and opening a separate brewing and canning facility, but the desire to use only local ingredients led Scott to open a distillery instead of a brewery.
Top of the Hill Distillery, distiller of TOPO Organic Spirits, opened in 2012, is the first and only USDA Certified Organic distillery in North Carolina and one of the few in the country. All of their spirits are distilled from scratch, using only locally sourced ingredients (when available). They have won many awards in international competitions for their vodka, gin, moonshine, Eight Oak Whiskey, Reserve Straight Wheat Whiskey, and spiced rum. They also produce a line of bitters!
